Whole Wheat Eggless Banana Chocolate Cake

Christmas is almost there and there is so much to do in just few hours. It is midnight ,while I am writing the recipe of this delicious chocolate cake which I baked today. It has been raining since 2 days and Sun has not shown his bright face since 5 days. It is been too difficult for me to shoot during these dark cloudy days as I only use natural light to shoot my photos. I know I didn’t do justice with the photographs. The cake was much more delicious than it looks in the pictures.
This Whole Wheat banana cake is egg less but you can try it with eggs also , as it will be more spongier than this one. Also, If you use Maida or all purpose flour to make this cake it will be more soft. I like whole wheat cakes as they are more healthier than all purpose flour cakes. The method is very simple,mashed bananas are mixed with sugar, oil and vanilla essense and then added to the chocolate flour paste . The mixture is then baked at 350 degree F and the cakes comes out fresh, chocolaty and yummy.

WHOLE WHEAT EGGLESS CHOCOLATE BANANA CAKE
Ingredients
3 overripe Bananas
3/4 cup packed dark brown sugar ( or regular sugar powdered)
1/2 cup vegetable oil or butter ( at room temperature)
2 tbsp roasted flax seed powder
6 tbsp warm water
1tsp. vanilla
1 cup whole wheat flour
1/2 cup unsweetened cocoa powder
1tsp baking powder
1/2 tsp baking soda
salt a pinch
1 tbsp chocolate chips for topping
METHOD
1. In a samll bowl mix warm water and flaxseed powder and set aside. This mixture is called flaxseed egg replacer and can be used in cakes and cookies to replace eggs.
2. In another big bowl mash the bananas using a potato masher or fork and add sugar, oil, vanilla and flaxseed replacer to it. Mix every thing well. if you are using eggs you can also use a hand blender to mix everything.
3. In a separate bowl sieve together flour, baking powder,baking soda, cocoa and salt . Sieve at least 3 times, as this is an eggless preparation this will aerate the flour.
4.Now add flour mixture to the mashed banana mixture gradually. add half of the flour- cocoa first.
5. mix well using a hand mixture or hand and once the flour is mixed , add res of the flour cocoa mixture.
6. Ensure the batter is neither too thick nor too runny.
7. you can also add chopped nuts, or raisins if you wish. Now Pour the batter in a greased and flour dusted baking pan and set it properly.
8. Sprinkle the chocolate chips all over the surface of the cake batter.
9.Bake the cake in a preheated oven at 350 degree F for 50 -55 minutes.
Once done let it cool on a cooling rack for 20 minutes then loosen the edges and take it out from Baking pan.
10. Cut in desired shapes and serve !
NOTES:
1.This is an eggless cake so make sure that you sieve all dry ingredients 3 to 4 times. This will help air to enter in and hence making the cake spongy.
2. If the batter is thick you can add water and if you feel its thin add more flour to it.
3. Don’t give up if first time it doesn’t turn up great..just keep trying you will knock it.

Hi swati .. I tried this cake .. It rises well while baking but after taking out of oven .. It sinks down… Can u please help me where I have gone wrong.
Hi Ruchika! Eggless cakes are less spongy that egg cakes. The trick to make them spongy and fluffy is to sift the flour 3-4 times.The more you sift the flour, the more spongy it becomes. Also since the cake is eggless and made of whole wheat, it would not be ad fluffy as maida cake, but if rises well in the oven, it make sink a little bit but not much..I think it happened because may be it was not properly sifted. How was the taste and texture of the cake?
