When your mornings are busy, smoothies are such a saver. They are easy to make, keep you full, so healthy and you can be as creative as you want with them. I love to drink my smoothies, sometime after my workout as I want something refreshing and quick for myself. This Vegan Green smoothie is my latest love in smoothies. It is

I have a long time issue with bloating, and when few of my friends suggested me to reduce the amount of regular milk, I thought of using coconut milk. You can use regular milk or any other milk of your choice. Coconut milk really tastes so good in this smoothie. I will try more smoothies with coconut milk. Another ingredient that enhances the flavor of this smoothie is Ginger. Altogether this smoothie is a blend of all healthy ingredients, that will help you to keep fresh, help you with bloating and boost your immune as well.
This Vegan Green Smoothie has
1. Spinach- Rich in Iron content and Fiber
2. Banana- High in fiber, and Potassium. The soluble fiber has the tendency to slow down digestion and keep you feeling full for a longer time.
3. Cucumber- They are 95 percent water, making them an ideal hydrating and anti Inflammatory
4. Ginger- Helps in Digestion and Allergies.
5. Dates- Excellent source of Energy, iron, and fiber.
6. Chia seeds- Rich in omega-3 fatty acids, Fiber, Iron and Calcium
7. Parsley- Has Antibacterial and Antifungal Properties that help in boosting our immune.
8. Coconut Milk. Coconut milk is highly nutritious when ingested, and these nutrients are good for your hair and skin.
All these ingredients combined, make for one super healthy smoothie.
Here is how I made it
Vegan Green Smoothie
Ingredients
- 1 Cup Spinach
- 1/2 Cup Parsley Leaves
- 3 Pitted Dates
- 1 Cup Coconut MIlk
- 1/2 Banana
- 1 small cucumber diced
- 1/2 inch Ginger chopped
- 1 tsp Chia seeds
Instructions

Soak the Chia seeds in water for 5 minutes.

In a Blender, grind together all the other ingredients.

Add chia seeds on top and enjoy.

Smoothies are such a great way to start a day especially for people who tend to skip breakfast. You can just take it with you on the road and still get a ton of nutrients. I like the idea of adding dates to this green smoothie. I have not seen that before.
I’ve never put parsley in a smoothie before – I bet it adds a nice refreshing flavor. I can’t wait to try this!
I must admit that green smoothies rarely look appealing to me, but this one sounds delicious! I love that you added dates for a little sweetness. And the coconut milk is a great idea!
