Summers are here and the makets are loaded with fresh and juicy strawberries. These sweet, juicy and red berries retain their sweetness only for a short period of time. They generally begin to ripe within two to three days of picking. Strawberries are loaded with antioxidants.
Strawberries are my little one’s favorite fruit during summers. When few days back my husband went to the wholesale club for grocery shopping, my little kid also went along with him. As he is so fond of strawberries, he asked his father to get him a pack of strawberries.When they both came back home and I saw this big pack of strawberries, I got tempted to make cupcakes out of them.
Hey Did I told you guys about our visit to the strawberry farms for the annual strawberry fest? Oh It was so much fun visiting the huge farmlands filled with fresh blooming strawberries.we also visited the local shopping plaza which was filled with ckaes, pies and muffins made with fresh strawberries. Our kids had fun picking the berries, getting their face painted by local artists,clicking the pictures with all the beautiful nature.
These cupcakes turned out so delicious and refreshing and they are very easy to make. I added fresh strawberry chunks in this recipe , but you can also use frozen ones.Here is how I made them.
Preheat oven at 350 degree F ( 180 degree C). In a bowl, mix all-purpose flour (maida) , baking powder , a pinch of salt.
Take one yellow lemon and grate its top yellow skin using a grater to collect lemon zest. We need about half tea spoon of zest in this recipe. Make sure you wash and dry the lemons first Now mix everything using a spatula or a whisk.
In a small bowl add the chopped strawberries and add some sugar. Mix well and let these marinate for few minutes.
In another bowl , place the room temperature butter and beat the butter using a hand mixer or stand mixture. Beat it till it becomes soft. Now add sugar and beat again for 4 minutes till the butter and sugar mixture becomes light and fluffy.
Now take 3 large eggs and add them one at a time , beating the mixture simultaneously. Keep beating until the egg, butter and sugar mixture becomes soft and creamy.
You may see some lumps , but that’s fine at this point. Now add Vanilla extract and mix again. Now add the flour mixture alternately with milk. First half of flour and beat using hand mixer. Then add milk and mix again. Then add the remaining flour and milk and beat this batter until smooth.
At this time add the marinated strawberries and mix with spoon. Transfer this batter into cupcake moulds and let these cupcakes in oven for 20 minutes.
Your beautiful cupcakes will be ready to serve.
- 1.5 cups All Purpose Flour
- 1 cup chopped fresh or frozen Strawberries
- 1 small Yellow Lemon for zest
- 2/3 cup + 2 tsp granulated Sugar
- 3 Large Eggs ( room temperature)
- 1/2 cup unsalted Butter ( room temperature)
- 1.5 tsp Pure Vanilla Extract
- 1.5 tsp Baking Powder
- 1/4 tsp Salt
- 1/4 cup milk
- Preheat the Oven to 350 degree F or 180 degree C. In a small bowl mix chopped strawberries and 2 tsp of sugar and keep aside to marinate for few minutes.
- In a big bowl, sift the all purpose flour, Baking powder and salt. Take one lemon, wash and dry it and then grate the top yellow skin for collecting lemon zest. We need about 1/2 tsp zest for this recipe.Mix the zest to the flour mixture and keep the bowl aside.

- Take them out and let them sit on cooling rack until they are at room temperature. Keep them in fridge and serve them cold to enjoy the best flavors
- These cupcakes taste best when they are cold.If you think that the batter is thick you can add more milk. Make sure that the batter is not too runny.
- You can use fresh or frozen strawberries as well.
- Baking temperatures vary from oven to oven. Please keep checking your cupcakes in between.
