Soya granules or meal maker is a great source of protein, calcium, and iron for vegetarians. Soya granules are easily available in any Indian Grocery Store and the brand I am using for many years is Nutrela by Ruchi nutrition.

We have been enjoying Nutrela since we were kids. As Soya chunk granules are a great source of protein for vegetarians, my mom used to include this a lot of times in our meals as she is a vegetarian. As the texture of soya granules is chewy, quite similar to meat, when we were kids, she used to say that this is chicken keema( minced chicken).
I have tried many recipes including Soya granules or Soya Chunks. Some of them are
Soya Veg MomosLayered Soya Biryani
Soya Matar PaneerVegetarian Keema Paratha
I made these soya Granules veggie balls for my kids, as an after-school snack. They are also a great party appetizer.
You can deep fry, bake or air fry them in air fryer as per your choice. As I was making them for my kids, I deep fried them, but you can bake them in oven or appe pan or air fry them.
Soya Granules Meal Maker Veggie Balls would also be fun to be tucked into lunch boxes. You can serve them either warm or cold, with some ketchup or honey-mustard sauce on the side for dipping.

Instructions

-
Thaw and pat dry all the frozen vegetables and then in a food processor or a blender, grind them coarsely.
-
Soak the soya granules in warm water and let them soaked for 10 minutes. After 10 minutes, take them out and squeeze out all the water.
-
Meanwhile, chop all the other veggies, collect all the spices and other ingredients.
Method of the Recipe
-
In a big bowl mix together, vegetable blend, potatoes, bread crumbs, soya granules, semolina, spices and mix them well with your hands.
-
Take a small portion, about a lime size of the veggie mixture in your hands and make balls. Once all the balls are formed keep them aside.
-
In another bowl make a solution of corn flour, all purpose flour or maida and water. make sure you add the water gradually to avoid lumps.
-
In a separate plate or wide bowl keep the semolina ready for coating.
-
Also, keep the oil or appe pan or air fryer ready to deep fry or bake.
The Final procedure of the recipe
-
Take one ball at a time, dip it quickly in the cornflour and maida ( APV)and roll it on the semolina ( sooji) plate and put it in the pan for frying. Repeat the same procedure for all the balls.
-
If you using an air fryer or appe pan, then also keep them in air fryer basket or appe pan holes.
-
Cook them until they are brown in color and look cooked. Since I have not tried them in air fryer, I cant suggest the exact temperature, but I guess it should be similar to regular veggie balls.
