QUICK VEGETABLE FRIED RICE

Quick vegetable fried rice is an alternate to the original fried rice where you have to add spices and sauces to create the same restaurant like flavor. I make this quick rice specially for kids lunch box in morning when there is shortage of time. with Just a little bit of pre planning you can also pack varieties in your kid’s or husband’s lunch box.

I used left over rice, I usually cook rice a night before for making fried rice and then some chopped vegetables. Wait then why quick? Well its quick because of the Miracle masala I used. Yes, Ching’s secret miracle masala is all I added in this rice preparation and that’s it. It tasted exactly the way I like just restaurant style. I packed it with Garlic mushroom with gravy.

QUICK VEGETABLE FRIED RICE

INGREDIENTS

Left over rice ( or cook rice 2 hours before making fried rice)- 1&1/2 cup cooked
Vegetables of your choice ( diced carrots, bell peppers, beans, corn, peas ) – 1 cup
Chopped onion- 1 small
minced garlic- 6 or 7 flakes
Chings secret miracle masala- 2 tbsp.
Sesame oil- 2 tbsp

METHOD

  • In a wok or Iron kadai ( if you don’t have any use regular pan) heat oil on high flame.
  • When the oil is hot add garlic and sauté for 2 minutes. Then add onions and stir fry them till they start getting brown on sides.
  • Add all the vegetables and keep stirring on high flame.
  • Add Miracle masala and stir for another 2 minutes. Then add rice and stir it.
  • Keep stirring on high flame for 2 to 3 minutes and turn off the stove.
  • Garnish with spring onions and serve hot.
