Paneer & Veggie Galette

IMG_7895_FotorGalette is a French term that refers to a variety of flat, round cakes, usually made with a flaky pastry dough of some kind. It refers to a free form tart that is made with a flaky pasty crust. These tarts are not molded in tart pans. Instead, filling is placed directly on top of a sheet of rolled out pastry and the edges of that pastry are folded up and around the filling. The tart becomes crisp during baking.

I have recently joined a group of creative food lovers who love to experiment baking in their Kitchen. As I am a novice in this area of baking, When I came to know about this group, I happily joined. Galette can be sweet or savory,you can play around with it a bit.You could add blueberries, apples,bananas or any fruits of your choice to make sweet Galette and toss in a pinch of cinnamon or nutmeg. If you want to make savory Galette, you fill the tart with ingredients vegetables, cheese or meat and can turn a sheet of pastry into a beautiful main course. It is more common for galettes to be filled with fruit, chocolate or other sweet elements and served for dessert, though.

For a basic savory Pastry dough, you really only need few ingredients: flour, butter,salt, corn starch and water. Simply roll your dough out onto a parchment-lined baking sheet and place the filling in the center of the pastry, leaving a border around the edges. Fold up excess pastry to cover the filling slightly, then bake until the pastry is brown and crisp. To make more healthy I have used olive oil.

PANEER & VEGGIE GALETTE

INGREDIENTS

FOR DOUGH
Maida ( APF)-1+3/4 cup
corn starch-1/4 cup
Olive oil- 1/4 cup
Sugar- 1/4 tsp
Black pepper- 1/4 tsp
Salt- to taste
Ice Water- to knead a dough

FOR FILLING
Paneer crumbled- 1 cup
Chopped Mix vegetables- 1 cup ( Carrots,peas,beans, corn)
Chopped Onion- 1 medium
Cumin seeds- 1/2 tsp
Red Chili powder- 1/2 tsp
salt- to taste
Tomato ketchup- 1 tsp.
white sesame seeds- 1 tsp.
Oil- 2 tsp.

METHOD
1. In a medium bowl, combine the flour, corn starch, sugar,salt and pepper.Add Olive oil and mix with hands.

2. Add the ice water and gently knead a dough. The dough should not be very soft. Wrap the dough in a plastic wrap and keep in fridge for at least 30 minutes.Meanwhile prepare the filling.

3. In a non stick Pan,heat oil and put cumin seeds. Once they start to crackle, add onions.

4. Cook onions till they turn transparent. Now add the veggies and saute for a while.cover with a lid and cook for 3-4 minutes. Then add Paneer, salt and red chili powder and stir. Turn off the flame.

5. Pre-heat the oven at 400F or 200 C.Let the dough out from fridge and let it thaw for about 10 minutes. Discard the plastic wrap and place the dough on parchment paper. Now, using a rolling pin, roll out a thin (1/8inch thickness) rough circle.
Now, place a plate on the rolled out dough and make a mark to use as a guide for the filling.

6. Spread a tsp of ketchup and place 2 tbsp of filling at the center.Now, using your fingers, cover the filling with the extra flap of pastry dough on all sides and pinch to secure the stuffing.

7. Brush the Galette with milk and sprinkle white sesame seeds. Bake it for about 40 minutes or till the galette is crunchy, golden brown and forms a nice crust. Remove, cut in slices and serve hot with Ketchup.
