No Bake Coconut Apricot Granola Bars

Easy No Bake Coconut Apricot Granola Bars are delicious after school snack for Kids or Healthy Snack For You!

 

The ingredients in these granola bars reflect several of the goodies you would find in a trail mix, but theyโ€™re packed into the convenience of a bar. The texture of the bars is chewy, with a bit of crunch from the nuts and oats.They are great for breakfast on the go, a mid-morning or afternoon snack, or to take out for a picnic.

Coconut adds flavor and Almonds add that crunch, and the sweetness comes from dates and apricots. I used Maple syrup to provide that extra sweetness and binding to the granola mixture and organic coconut oil to grease my hands while kneading and setting into a baking dish. Although they are NO BAKE granola bars, I used a little bit of my stove to dry roast the oats.If you want to avoid this step, you can get store bought granola too.

 All of these ingredients are so incredibly good for you but also make for a really delicious combination, and since they have oats, nuts, dried fruits and coconut they are actually filling and will keep you satisfied for a good while.

Raisins- They can aid digestion, boost iron levels, and keep your bones strong

I am really in love with these granola bars and still munching on them while writing this post :).

I will bake… Nah Nah no bake rather make, granola bars very soon again, but this time with some other ingredients. If you love No bake snacks try my No bake graham Cracker balls . Till then, please try this recipe to make your own No Bake Granola bars and enjoy healthy snacking!

No Bake Coconut Apricot Granola Bars

Delicious and Chewy Granola Bars filled with nutrition and energy.

Ingredients

  • 1.5 Cups Rolled Oats
  • 1 Cup Pitted Dates
  • 1/2 Cup Dried Chopped Apricots
  • 1/2 Cup Chopped Almonds
  • 1/2 Cup Desiccated Coconut
  • 1/4 Cup Raisins
  • 2 tbsp Maple Syrup/Honey
  • 1 tsp Organic coconut oil

Instructions

  1. Gently toast oats in a non-stick pan until they become fragrant for about 5 minutes on medium flame stirring continuously. Take them out and let them cool.

  2. Grind the pitted dates in a blender to make Puree.

  3. In a big bowl, mix all together oats, dates, apricot, coconut, raisins, maple syrup using your hands.

  4. Press well into a baking dish lined with Parchment paper. Make sure you grease your hands with coconut oil


  5. Freeze for about 30 minutes and then cut into desired shapes.

  6. Your no-bake granola bars are ready to snack on.

Recipe Notes

If you don't want to cook oats, you can skip this part of toasting them, but toasting enhances the flavor.

You can add or subtract the amount of maple syrup added in the mixture, you can also add honey.

This recipe can be as creative as you want, so you can add more nuts or seeds or dried fruits.

    Such an excellent mix of healthy ingredients Swati. Loved the recipe! I am all for home made snacks and this would certainly top the list. addition of maple syrup, oats, and nuts / seeds which usually kids don’t consume are well hidden in this power packed snack. Apricots and Coconut oil are the 2 ingredients that I loved in this recipe, a sure stunner!
