Sweet Tomato Chutney that too in microwave is an easy and quick way to make chutney. The taste of this chutney is very similar to sweet and sour mango pickle that my granny used to make. In making this chutney panch phoran is used. Panch Phoran means a mixture of 5 spices that are Methi ( Fenugreek seeds), Rai ( Musturd seeds), Zeera ( cumin seeds), Til ( sesame seeds) and Saunf ( fennel seeds).
What is a Chutney and why do we call it as chutney?…My 9 year old son asked me one day..Mummy why don’t you simply call it a dip? That’s what kids are…sometimes they ask some questions which are difficult to answer. “Beta I will let you know the answer once you finish the food” ..I told him as I wanted to bargain sometime to find the answer to his question. I quickly approached God Google and found this answer The word “chutney” is derived from the Hindi word chatṭnī, meaning to lick…oh yes that’s what we do after eating chutney as it is sweet and sour, I smiled and explained him.
Here is the recipe
MICROWAVE SWEET & SOUR TOMATO CHUTNEY
INGREDIENTS
4 ripe tomatoes chopped
salt a pinch
1.5 tsp Panch phoran
1 red dry chilli
1 bay leaf
1/2 tsp mustard oil / sesame oil
1/2 tsp turmeric
1/4 cup sugar
1/4 cup water
METHOD
- Take a Microwave vessel and add Panch phoran and red dry chilli and microwave for 1 minute.
- Take this out and give it a stir and keep back in microwave again for 1 minute.
- Now Take out half dry chilli out to make powder. Add mustard oil to the rest of mixture in the vessel.
- Microwave for another 2 minutes and then add rest of the ingredients.
- Give this a stir and microwave for 5 minutes.The sugar liquid should be sticky when touched.
- If this is still watery then microwave for some more minutes.Once the chutney becomes thick take it out and garnish with red chilly powder and some Panchphoran. Serve with Parantha or roti and enjoy!!
