What will you call a snack which has Flaxseeds, Apples, Yogurt, Cinnamon and Flour…Correct Nutritious!!! Today I made these super delicious, Quick, healthy and easy Snack for my school going kid. He is fond of cakes and cupcakes like every other kid of his age, but he doesn’t like apples much. I found this recipe like a blessing in disguise( Hidden apples) He loved this so much that he finished his snack and asked me to keep in his snack box for school next day too.

FLAXSEED AND APPLE SQUARES
INGREDIENTS:
Apples washed, peeled and chopped – 2
Cinnamon powder-1tsp
Brown Sugar-4tbsp
Roasted flaxseed powder-2tbsp
White granulated sugar-1 cup
Maida or all purpose flour-1 and 1/4 cup
vegetable oil-1/3 cup
baking powder-1tsp
salt-1/8 spoon
eggs-2 Or use flaxseed replacer
yogurt-1/3 cup
Vanilla flavor-1 tsp
METHOD
- In a bowl marinate chopped apples with brown sugar, flaxseeds and cinnamon.
- In other bowl mix white sugar, oil, yogurt and vanilla and whisk them to make a smooth mixture
- Put two eggs and beat the whole mixture to make a smooth batter.
- In a separate bowl sieve all purpose flour, baking powder and salt together.
- Mix dry ingredients into wet mixture slowly and whisk to make a batter. Make sure no lumps are formed. You can use your hands for whisking or an electric mixer.
- Pour half the batter into the pan. Spread half apples over it. Then spread the batter again and finally spread the apples on top too.
- Bake on 350 degree F or 170 degree centigrade for 55 minutes and take the cake out after checking with a toothpick in center.If the tooth pic doesn’t comes clean bake for 5-10 minutes more.
- Let the cake cool and then cut into squares and serve.
