It is a beautiful sunny day out after several days of snow. Sun brings life and energy to our lives. The trees are looking beautiful with snow sitting on the branches and twigs, the birds are happy to be out taking a sun bath in snow.. saw some crows outside doing a ramp walk on our drive way. I took my camera and clicked few shots. Nature has so much in it..it’s so deep and inspiring..Well, I got charged up after seeing such beauty outside and decided to make this carrot and fruit cake for my kids. Its Friday and I like myself to be free on weekends so that I can give more time to family so these kind of snacks help me in saving time in cooking as well as they serve the purpose of nutrition too.
DELICIOUS CARROT & PINEAPPLE CAKE
INGREDIENTS
Carrots- 3cup
Brown sugar-1/2 cup
Raisins- 1/2 cup
eggs- 2
White sugar-3/4cup
vegetable oil-1/2 cup
Vanilla- 1tsp
Pineapple chopped- 1/2 cup
All purpose flour or Maida 1and1/2 cup
Baking soda-1tsp
Baking Powder-1tsp
salt- 1/2 tsp.
Cinnamon- 2 tsp.
Chopped Walnuts- 1/2 cup
METHOD
- In a medium bowl mix grated carrots and brown sugar. Set aside for 60 minutes, then stir in raisins
- Preheat the oven to 350 degrees. Grease and flour a 10 inch cake pan.
- In a large bowl beat eggs until light. Gradually beat in the white sugar, oil and vanilla. Stir in Pineapple.
- Combine the flour, soda, baking powder, salt and cinnamon.
- Stir into wet mixture and finally stir in the carrot mixture.
- Pour evenly into the pan. bake for 45 to 50 minutes. Do a toothpick test and take it out if done. Transfer it on a cooling rack and let cool for 10 minutes. Frost with cream if you want or enjoy it as it is.
NOTES
You can always replace eggs with Flaxseed egg replacer. Also you may make this cake using whole wheat flour as I often do. I hope you like this cake and so do your family.

Ragni…you can use 2 tbsp. of powdered flaxseed with 6 tbsp. of water in replacement of 2 eggs.
