CORN AND SPINACH BASKETS

Corn and spinach baskets are very easy and quick Semi home made snack. Delicious and saucy corn salad filled in crunchy mini fillo shells make this snack an appetizing and delightful bite size snack.

Today, When I went outside for walk, this little leaflet brought smile on my face. After a long, cold, dry and colorless winter , finally spring has arrived at our place. One reason for my delight is that the spring season for me marks the beginning of something new. It is a sign of God’s fresh beginnings. Nature takes on a new look. What a beautiful panorama is provided by the trees as they begin to bud and dress themselves in new leaves. This process is steady and sure.

RECIPE OF CORN AND SPINACH BASKETS

INGREDIENTS

15 ready made flour baskets or Tarts ( I used ATHENS mini fillo Shells) easily available in frozen section in any grocery store.

FOR FILLING
Boiled Corn- 1/2 cup
Spinach boiled and Pureed-1/4 cup
Chopped Onions, tomatoes and coriander leaves- 1/3 cup each
ginger chili paste-1tsp.
Chaat Masala- 1tsp.
Lemon juice- few drops
Cumin powder-1/2 tsp.
Salt- to taste
Olive oil for drizzling.

METHOD

  • Mix all the ingredients required for filling in a mixing bowl.
  • Preheat the Oven at 375 degrees F or 170 degree C.
  • Fill the fillo shells or baskets with a spoonful of filling mixture and bake for 5 minutes in Oven
  • Take the baskets out and drizzle each basket with few drops of olive oil.
  • Garnish with a piece of tomato and serve these crunchy and crispy baskets with your favorite drink.
