Nothing beats the winter chill like a steaming bowl of soup. I love to have soups specially in winters. This soup is a very delicious and healthy one for weight watchers too. It has carrots, celery and onions making it a very healthy soup. I also added some Potatoes and noodles to the soup just to attract my kids. You can add any other vegetable of your choice like bell peppers, mushrooms etc.
Here is the recipe
CARROT, ONION and CELERY SOUP
INGREDIENTS
Olive oil-2 tbsp.
Celery sticks- 2
Carrots- 2 medium diced
Onion- 1 small
Potatoes- 1 small diced
bay leaf- 1 big
peppercorns-5 or 6
Garlic- 2 or 3 cloves minced
Noodles-1/2 cup seasoned or plain
Chicken or vegetable broth 4 cups
Salt and pepper to taste
Vegetables of your choice( optional)
Cilantro leaves for garnishing.
METHOD
- Heat the olive oil in a large saucepan or Dutch oven over medium-high heat until shimmering. Add the bay leaf and peppercorns, garlic , season with salt and pepper, and cook, stirring occasionally, until translucent, about 5 minutes.
- Add the onions and carrots , season with salt and pepper, and cook, stirring occasionally for about 2 minutes.
- Add the celery and season again with salt and pepper and cook an additional 5 minutes.
- Add the broth, potatoes, and any quicker-cooking vegetables (such as asparagus and peas). Let the soup come to a boil, then reduce the heat to low and gently simmer, uncovered, until the potatoes can be easily pierced with a fork, about 15 to 25 minutes. Now add noodles and cook for a minute more. Taste and season with additional salt and pepper as needed. Garnish with Cilantro and serve.
