Bean and vegetable soup is a very healthy and nutritious soup which serves as a full meal. It is a combination of all seasonal vegetables, beans and pasta. It is also called minestrone soup at some places. I love to make this soup specially on chilled winter days and since its a one pot full meal, I like this one so much as it fulfills all the nutrition requirements which I want to give to my family. This soup tastes best when served hot and fresh.
BEAN AND VEGETABLE SOUP
INGREDIENTS:
Chopped Onions-1 medium
Chopped garlic-1tsp
Chopped celery- 1/2 cup or1 stick
Chopped Spinach-1 cup
Chopped Zucchini and carrots-1 cup
Black beans Boiled-1/2 cup
Lima beans -1/2 cup
Diced tomatoes-1 cup
macaroni pasta-1cup
canned or fresh corn-1/2 cup
Oil-2tbsp
salt- to taste
Black pepper-1tsp
Water-8-10 cups
METHOD
- Put oil in a heavy base pan and let it heat a little bit. Add onions and stir for a cuple of minutes.
- Add garlic and sauté.
- Now put chopped Celery and Spinach and cook for 5 minutes.
