Almond Cookies

Delicious, Crunchy, and flavor, these Almond Cookies are a winner in my home. My kids just love these buttery cookies with a glass of cold milk.

Its back to school time and Kids as well as moms are super excited for the new school year. When I was packing their school supplies, I was so nostalgic at that time. I remember, when I was a kid, back in India, we used to buy all the books and stationary before school time. That feeling was awesome, new pens, new notebooks, new books, new back, everything gave so much happiness. My little Kindergartener, can’t stop himself from opening his backpack again and again to check his school supplies 😀

These cookies are not only crunchy, but they have a lot of flavors as well. My kids love to devour them with a glass of milk after they come back from school. It is really hard for me to resist these delicious cookies.
If you are vegan, you can replace the butter with coconut oil.

These cookies are so easy to make and they are eggless too. Be prepared to eat more than one or two. You can use walnuts on top also if you don’t have almonds.

Ingredients

  • 1.5 cups unsalted butter
  • 2 cups sugar
  • 2 cups All Purpose Flour
  • 2 tsp baking powder
  • 1.5 cups almond flour
  • 1 tbsp ground cardamom
  • Almond Slices
  • confectioners sugar

Instructions

  1. Preheat the oven to 325 F

  2. Melt the butter and sugar in a small saucepan over medium heat, stirring until the sugar dissolves

  3. Sift the all-purpose flour and baking powder in a large bowl. Stir in the almond flour and cardamom. Add the butter mixture and stir until just combined. 

  4. Line two cookies sheets with Parchment paper. Take a lemon size portion from the dough and roll it to make a ball. Press it gently to make a disc and slightly press and almond at the center.

  5. Place all the cookies on the baking tray at an inch apart. Bake for 15 to 18 minutes, until lightly brown.

  6. Let rest for 5 minutes on the cookies sheets. Transfer to wire racks to cool completely. Dust lightly with confectioner's sugar and serve
