Raksha Bandhan means “the tie or knot of protection” It is an ancient Hindu festival that ritually celebrates the love between brothers and their sisters. The sister ties a Rakhi( decorated thread) in the wrist of her brother, then prays to express her love and her wish for the well being of her brother; in return, the brother ritually pledges to protect and take care of his sister under all circumstances.
When I was little, I always felt sad on this festival because I have only one sister and when we used to see our neighborhood friends celebrating this festival I always used to wish that I had a brother too. Then my mother suggested me and my sister to tie rakhi to each other only and as an elder sister, to take promise to always protect and take care of my younger sister.
I love my sister and to me she is not only a sibling but just like a daughter. when I came to know about this DFT’s theme I closed my eyes remembering her and suddenly a series of memories went though my closed eyes. Memories of our childhood, our fights, our lovely moments and above all how she loves everything I cook. Yes, She loves everything I cook. I have experimented a lot of food on her only :D. Whether she liked it or not she always used to say ” Awesome didi” !! I know that was too sweet of her.
Today I am sharing with you all her most favorite food- PANEER!
Thinking of my sweet little sister I cooked a Diabetic friendly Grilled Paneer Sauteed in homemade Barbeque sauce. You can eat this as a snack or even as a main course making it wrapped in a Roti( tortilla) and serve as a Roti roll.
I recommend you to eat 4-5 pieces of each Paneer and Mushroom as a snack. If you want to eat it as a main course then you can take it one chappati.
GRILLED BARBECUE PANEER AND MUSHROOM
INGREDIENTS
For Making Barbecue sauce-
Apple Cider vinegar-1/4 cup
Dark Soy Sauce- 1tbsp
Dry ginger-1tsp.
Dry onion powder-1tsp
Dry Garlic Powder-1tsp.
Cinnamon powder-1/2 tsp.
Tomato Ketchup-1tbsp
Pure Honey-1tsp.
Chilli Garlic sauce-1tbsp
Water-1/4 cup
Butter- 1tsp.
OTHER INGREDIENTS
Low Fat Paneer – 200 gms
Button Mushrooms- 5-6
Green Bell pepper- 1 small
Olive oil – 1tsp.
salt- to taste ( keep it less)
METHOD
1. Heat the butter in a pan till it melts. Add all the ingredients ( except Honey) required for the sauce and then bring everything to boil. Simmer for 2 minutes and cook till the sauce becomes thick. Then turn off the flame.Add honey once the sauce gets cooled.
2. Mean while Cut Paneer into cubes. Wash and dry mushrooms and cut bell peppers into big chunks.
3. In a big bowl put Paneer, mushrooms and bell peppers. Add Olive oil, salt and pepper and marinate this for 10 minutes.
4. Turn on the grill or put the oven in grill mode and grill the marinated Paneer, mushroom and bell peppers for 15 minutes, turning them in between.
5. Take them out of oven and brush the sauce over them on both the sides. Keep them back in oven for 15 minutes and then turn off the grill or Oven.
6. To serve arrange them in a wooden toothpick and serve hot with Sauce. You can also roll them in a chapatti or tortilla and serve then as a roll.
I am sure if my sister would have taste them , She would have loved them. Aah!!! missing her too much.

Paneer/ Cottage Cheese – Cottage cheese is a great source of calcium,Vitamin D,vitamin B complex and protein.

Portion control plays a dominant role in meal planning for people with diabetes. Two ounces of low-fat or nonfat cottage cheese provides 7 grams of protein, about 2 grams or less of carbohydrates and about 1 gram or less of fat. This amount is listed as a serving on the diabetic exchange list.
Mushroom
Mushrooms are an ideal low-energy diet for diabetics. They have no fats, no cholesterol, very low levels of carbohydrates, high protein content, and a wealth of vitamins and minerals. They also contain a lot of water and fiber. Moreover, they contain natural insulin and enzymes which help the breaking down of sugar or starch in food. They are also known to contain certain compounds which help proper functioning of the liver, pancreas and other endocrine glands, thereby promoting the formation of insulin and its proper regulation throughout the body. Diabetics often suffer from infections, particularly in their limbs, which tend to continue for long periods of time. The natural antibiotics in mushrooms can help protect diabetics from these painful and potentially life-threatening conditions.
